Amounts can vary depending on the number of fillets you have. You'll just kind of have to eye it and add ingredients as needed. The amounts listed below will cook a good number of fillets for a family of 4 or so.
INGREDIENTS:
I can of beer (of your choice)
1 cup spicy brown or honey mustard (depending on your favorite flavor)
2 eggs
1 to 2 packages of Zatarains Fish-Fri, Crispy Southern Style
In a large bowl, add fillets, beer, eggs and mustard. Let soak overnight if possible. If time is limited, simply soak as long as possible.
After soaking, fill a one gallon freezer bag 1/4 full with soaked fillets. The should feel a little slimy from the eggs. Dump about a 1/2 cup of Zatarains breading mix into freezer bag, then seal and shake. Shake until fillets are fully covered with breading.
Remove from bag and place fillets in deep fryer heated to 375 degrees. (Peanut oil cooks the best.) Cook only a few fillets at a time for best results. Fry until batter on fish is a dark golden brown.
