6 lbs ground venison
2 lbs ground pork
1/4 cup morton's tender quick
1 tablespoon fresh ground black pepper
1 tablespoon crushed red pepper flakes
1/4 cup brown sugar, packed
3 tablespoons dried sage

Mix ingredients.  I like to cook a small piece in the microwave until its done to test the spicing.  I usually add a little more pepper flakes and sage.  Separate into 1lbs bags and freeze.  Thaw and separate into patties to cook.  I can't take credit, I got the recipe off of allrecipes.com.
