1/4 cup Extra Virgin Olive Oil
1/2 cup Onion, chopped
1/2 small Carrot, peeled & minced
1 tblspn Red pepper Flakes "little heat"
1 teaspn Rosemary Leaves
1 cup Red Wine "good stuff"
1 up basic Tomato Sauce "see below"
1 lb ground Venison
Salt & Pepper to taste
Basic Tomato Sauce
1/4 cup Extra Virgin Olive Oil
1 Onion peeled and chopped
4 Garlic Cloves, minced
3 tblspn Dried Thyme
1/2 mediun size Carrot peeled and minced
2 28 oz cans Tomatoes diced or crushed
Salt & Pepper to taste
To make basic tomato sauce follow in order, cook for 2 hrs simmering. In large pot brown venison, add 1/2 cup onion, 1/2 small Carrot, , 1 tblspn Red pepper Flakes, rosemary leaves, red wine, basic tomato sauce, salt & pepper to taste. Simmer for another 2 hr.
